- 4 boneless skinless chicken breasts
- 2 cups Italian breadcrumbs
- 2 large eggs
- Olive oil spray
- ½ cup soy sauce
- ¼ cup brown sugar
- 2 tbsp mirin
- 1 tbsp minced garlic
- 1 tsp grated ginger
- 1 tbsp cornstarch
- 2 tbsp water
- Salt and pepper to taste
Slice chicken breasts in half lengthwise and season with salt and pepper.
Beat eggs in a shallow dish and place breadcrumbs in another dish.
Dip chicken in egg mixture, then coat with breadcrumbs.
Spray breaded chicken with olive oil on both sides.
Air fry at 375°F for 12-15 minutes, flipping halfway through.
Meanwhile, mix soy sauce, brown sugar, mirin, garlic, and ginger in a saucepan.
Mix cornstarch with water and add to sauce.
Heat sauce mixture until simmering
Stir in cornstarch mixture and cook until thickened
Brush teriyaki sauce over cooked chicken and let rest for 5 minutes before serving.
